Ginseng chicken soup (samgyetang)
・ 1/4 cup of sweet rice
・ a dozen cloves of garlic
・and 1 or 2 small ginseng roots.
① Wash and rinse your chicken in cold running water.
Soak 1/4 cup of sweet rice for 1 hour.
② Stuff the chicken with the sweet rice, a ginseng root, a few jujubes, and 3-4 cloves of garlic. Place it in a pot.
③ Pour water into the pot and boil it over high heat for 20 minutes. When it starts boiling, skim off any foam and fat that rises to the surface Then pour in more water and boil it over medium heat for 40 minutes.
When it cooks properly, the chicken will be easily pulled apart by chopsticks.
④Serve it with salt and pepper and kimchi or kaktugi.

・¼ pound of pork belly
・2 cups of aged Kimchi (older the better)
・1 ½ cups of water
・1 tsp of minced garlic
・2 tsp of sesame oil
・(optional) ¼ onion
・1 tsp of chili paste (gochujang)
① Chop vegetables and pork belly
② Start by adding the sesame oil and minced garlic
③ Add pork belly and keep cooking until the pink color is gone
④ If you like a thick and sweet stew, add onions and/or gochujang (both optional)
⑤ Add Kimchi and cook for about 10 min. Add water and on low heat, cook for approximately 20 min. Longer the better
⑥ Add tofu and green onions last and cook for 5 more minutes. Add sugar as needed for sweeter flavor.
